Green Bean Moong beans are commonly used in chinese cusine. They are generally eaten eaten whole (with our without skin) or as bean sprouts, or used to make the dessert ‘green bean soup’. The starch if moong beans is also seperated from the ground beans to make jellies and “transparent/cellophane” noodles. Vietnamese spring rolls are made from moong bean flour.
